In the Lab: Hermes Agent, an open-source mail-minder built by Nous Research, running on my own hardware, reading my own mail on this domain. I vetted every piece of the setup so the data never leaves the US. That took a while. It was worth it.
That's one bar: vetted, US only. Your books can go stricter. Fully in house, nothing leaving your machine at all, is just a different kind of build. Either way, I tell you exactly what goes where before anything runs.
